This is one yummylisious cake!! Perfect for Easter or Spring too. Cool, refreshing & just plain sweetness (but not too sweet). It taste better even on the 2nd day, trust me I had it for breakfast....bad me, but oh so good me!
I make this every year, and submitted it to our recipe book years ago. It is one recipe everyone asks me for, and I am happy to share it.
What you will need:
Simple and easy ingredients, and this cake is forgiving too. I didn't have enough of the fruit but it still turned out great.
First you will preheat the oven to 325*
Pull out your mixer and put in these 4 ingredients:
1~yellow cake mix, 4 eggs, 3/4 cup of veggie oil & a medium to large can of mandarin oranges but DO NOT drain them, throw it all in!
Mix it up good:
Pour it into a greased jelly roll pan or edged cookie sheet:
Smooth it all out evenly:
Put it in oven for 15-20 minutes depending on your oven. Make sure you put it in the middle rack and do not over cook it. It should be light golden brown and spring back a little.
Cool it on a rack:
Now let's make the easy frosting. I usually make it while the cake is baking, just rinse out the mixer bowl you used & add these 3 ingredients to it:
1~12 oz cool whip, 1~small package of instant vanilla pudding & 1~med to large can of crushed pineapple and again DO NOT drain it, dump it all in!
Whip it up real good:
It will have a medium thickness and be a little chunky with the pineapple. Refrigerate it until the cake has cooled down completely.
Once cake is cooled, spread the frosting on it:
Cover with plastic wrap or foil & refrigerate it till your ready to serve.

Hawaiian Delight
1~ box yellow cake mix
1 ~med. to lrg size can of mandarin oranges- Undrained
3/4 ~cup vegetable oil
4~ eggs
Mix these four ingredients together & pour into a large, greased jelly roll pan or raised side cookie sheet. Bake at 325* degrees for 15-20 minutes. (be careful not to overcook, & put on middle rack) Cool completely.
Frosting
1~ med to lrg can of crushed pineapple-Undrained
1~ 12 oz Cool Whip-unthawed
1~ sm box instant vanilla pudding
Beat together & let stand 5 min. Spread on cooled cake & refrigerate until ready to serve.
